Cottage Pie with Swede Mash and Cheese Topping
Ingredients
- 2tsp olive oil
- ½ chopped onion
- ½ chopped carrot
- 250g lean mince beef
- ½ tbsp tomato puree
- 150ml beef stock (oxo cube)
- Fresh thyme
- 50g Savoy cabbage sliced
For the mash
- 175g floury potatoes
- 175g swede
- 3 tbsp semi-skimmed milk
- 100gr mild cheddar cheese
Cooking the mash
- Cook potatoes and Swede till soft then mash and add milk
- Leave to cool for later
Cooking the pie filling
- Heat oil in a large pan then add your mince beef, cook till dark brown. Then strain fat off
- Then fry onion off then add the carrots keep stirring for five minutes.
- Then add mince beef with tomato puree and stock with thyme.
- Bring to boil, then cover and reduce to a simmer for 20 minutes.
- Part cook your cabbage in boiling water for 2 minutes then cool in cold water.
- When pie filling is cooked place in a tray then your cabbage on top then pie your mash on top.
- Sprinkle cheese on the top.
- Bake in the oven gas mark 4(160c) for 25 minutes until golden brown
